One of the benefits of teaching Zumba at a large American state university is the large number of international students. Here are some Chinese artists that were recommended to me by Chinese grad students studying abroad who take my Zumba classes. My personal favorite is Jolin Tsai. Enjoy!

Here’s what I did:

1) Rinse and completely dry 1 pint of fresh, raw cranberries.
2) Melt 1 bag of milk chocolate chips in the microwave. (You’ll need about 1 bag of chocolate chips per pint of cranberries.)
3) Coat each cranberry with chocolate and set on wax paper. (I had trouble with my chocolate seizing so I melted chocolate, spread the chocolate on wax paper, and coated each cranberry in chocolate that way. I then separated the cranberries and set them individually on wax paper.)
4) Refrigerate to set the chocolate.

I love these chocolate-covered cranberries. Some of the cranberries are solid and firm, but some of the cranberries break as you bite so you get a surprise burst of tart cranberry juice with chocolate… I think it’s delicious!

How well did it go over at Christmas? Not well. I made 4 pints of cranberries and I estimate less than 1 pint of them got eaten over two days. This was one of those lucky situations where I made something I loved to eat so at least when I got stuck with leftovers, they were leftovers I loved to eat. I did learn an important lesson: Making food that no one eats, no matter how much I love it, is a waste of money.

The fresh cranberries cost $3.99 a pint. Hershey Toll House Milk Chocolate chocolate chips were on sale for $2.50. Here is what you get nutritionally from one batch (1 pint of raw cranberries + one bag of Hershey Milk Chocolate chocolate chips) for about $7:

Zumba Video Game
I was lucky enough to participate in the Best Buy release of the original Zumba Fitness video game for Kinect on the XBox 360 at the Mall of America, in Bloomington, Minnesota last year and let me tell you, it is amazing! The Zumba Fitness video game is available for Wii and Playstation and WILL give you a workout. This year, the Zumba Fitness 2 video game is also available for Wii. Last night, I went to my closest grocery store to pick up more Almond Joy International Delight Coffee Creamer and it was gone! In its place, the Seasonal flavors like Pumpkin Pie Spice.

Today, I went to another grocery store and I was able to find and purchase some Almond Joy International Delight Coffee Creamer. Thank goodness! If you love this stuff as much as I do, find a grocery store that is still carrying it, and buy more soon! The Almond Joy creamer is beginning to disappear from stores!

Zumba with a Purpose to benefit Toys for Tots with a $10 donation on December 12, 2009 from 1-3pm at Gold’s Gym in Brooklyn Park, Minnesota. This Toys for Tots benefit will feature a group of local Zumba instructors and, keeping in the spirit of Toys for Tots, Marines.

I am one of the many unemployed people in the United States. I currently collect unemployment while looking for work and studying for the GRE. I spend most of my free time at the gym (Zumba(!), yoga, etc.) and/or running.

I lost about 20 pounds pretty easily after I was laid off due to less money for dining out and more time for exercise, but by mid-February, I had hit a wall where regardless of how much I ate, drank, or exercised, I wasn’t losing any weight. I was stuck at 126 pounds.

Then came Lent. I had never given up anything for Lent before and I decided it would be a nice challenge to give up something for a few weeks.

I don’t eat very much and I don’t eat a wide variety of foods so there were no food stuffs I could realistically give up for Lent. It came down to Mint Conditions from Caribou Coffee or Diet Coke. I love Mint Conditions, and I mean love. Mint Conditions, while expensive and unhealthy, are a treat and pick me up when I’m feeling blue. Giving up Mint Conditions for Lent was not an option. Giving up Diet Coke was my only option so I decided to give up all pop/soda.

Life went on as usual (minus soda) and about two weeks ago, I noticed that I started losing weight again. I am currently down to 121 and the only change I’ve made in my diet and routine has been cutting out pop for Lent.

On the downside, giving up soda has increase my alcohol intake. I am often the driver on nights out and Diet Coke with a slice of lemon was a nice alternative to alcohol. Diet Coke is not as boring and easier to drink than plain ice water, plus based on appearance, it could be a mixed drink and helps me feel like I fit into the bar scene when I’m not drinking. Since I gave up pop, I tend to order a Miller Lite even when I don’t really want or need one.

Will I give up Diet Coke for good, or will I take it back up on Easter Sunday? Only time will tell.
